  1. Sous vide is awesome. It's particularly amazing to me how you can turn a relatively low/mediocre cut of meat into something special with a little time and love. hehe. We put a half a cow in the freezer every year, so we always have a lot of cuts that you have to get creative with. I turn chuck roasts and similar into steaks that rival a nicely aged prime ribeye, seriously. It's like magic. haha

  5. My wife's family is primarily of Norwegian and Swedish descent. They love their lefse, so it's an annual holiday tradition around our house. Looks like yours turned out great! Krumkake (https://en.wikipedia.org/wiki/Krumkake) is also a very big deal for them. A few (very few) of the men in her family really like lutefisk (https://en.wikipedia.org/wiki/Lutefisk) too, but I really dislike it. hahaha... You have a beautiful home. I love those wood floors.
  6. That's always been my approach as well. It's not going to be perfectly accurate, but it's close enough to give the operator a good sense of the total fish mass in the system. At the tilapia hatchery, this was an exercise we did about once a month.
