Fish Kebabs With Salsa Dressing

Fiddly and a bit "faffy"......but worth it, methinks (fairly healthy, too !!)

Serves (makes) 6

Ingredients:

4 Tablespoons olive oil (plus some for brushing)

1 Tablespoon cider vinegar

1 Teaspoon clear honey

1 LEVEL teaspoon Dijon mustard

1 Tomato (medium to large)

2 Spring onions (trimmed and sliced)

8 Olives (sliced)

1 Tablespoon parsley (chopped)

250g White fish (skinned and cut into bite sized chunks)

220g Salmon (cut into bite sized chunks)

190-200g Raw king prawns

Method:

First, make the salsa...Mix the oil, vinegar and mustard together in a bowl and season with salt and pepper. Quarter the tomato, remove the seeds and juices, then dice the flesh, then stir into the dressing along with the spring onion, olives and parsley. Set aside.

Now, thread the fish and prawns onto skewers ( i thread in the order of...white fish, salmon, prawn. Repeat)

When all skewers are done, brush the kebabs with oil.

BBQ for 5 minutes, turning occasionally until the fish flakes easy, and the prawns are pink. Drizzle the dressing over the kebabs and...eat ;)
