Thai Cucumber Salad

Serves 4


1 Cucumber

1/2 A red onion

1/2 A cup of rice vinegar

Good pinch of salt

2 Tablespoons dry roasted peanuts

1 Tablespoon coriander (cilantro)


Chop up both the peanuts and the coriander and set aside

Peel, deseed, quarter, and finaly chop the cucumber, and place in a bowl

Chop the onion, and add THAT to the bowl.

Throw in the salt, and rice vinegar, and stir to combine

Top with the peanuts and coriander (cilantro)

Job done.....10 minutes, tops !!!!!
